I ranked all 171 type combinations

  1. Fighting/Ghost: I really slept on this type. Offensively, it is amazing, hitting 42.5% of all Pokemon for super effective damage, while only being resisted by two Pokemon. Defensively, it resists Stealth Rock, and is immune to Fighting.
  2. Ghost/Normal: Offensively, it is only resisted by 0.6% of Pokemon. Defensively, it is only weak to Dark, while it has three immunities, including Fighting.
  3. Flying/Steel: Offensively, its decent, hitting 36.2% of all Pokemon for super effective damage. Defensively however, is where it really shines. It is immune to Ground and Poison, has two quad resistances, six normal resistances, while only being weak to Fire and Electric. It is also immune to poison, as well as most forms of hazards since it is a Flying type, however unlike most Flying types, it isn't weak to Stealth Rocks. Its the perfect type for a wall.
  4. Fairy/Ghost: Offensively, it hits 32.8% of all Pokemon for super effective damage, while only being resisted by 0.3% of Pokemon. Defensively, it is only weak to Steel and Ghost, while being immune to Fighting.
  5. Ghost/Steel: Offensively, it is decent. Defensively, it is weak to ground, but is immune to Fighting, and resists nine types including Rock and Ice.
  6. Fairy/Ground: Offensively, it hits 43.8% of Pokemon for super effective damage, while only being resisted by 1.1% of Pokemon. Defensively, it is weak to Ice, but resists Rock and Fighting
  7. Flying/Ground: Offensively, it hits 49.7% of all Pokemon for super effective damage, while only being resisted by 1.4% of Pokemon. Defensively, it is quad weak to Ice, but resists Fighting and is immune to Ground.
  8. Bug/Fighting: Offensively, it hits 39% of Pokemon for super effective damage. Defensively, it resists Ground and Fighting.
  9. Fire/Ground: Offensively, it hits 48% of all Pokemon for super effective damage, while only being resisted by 2.5% of Pokemon. Defensively, it is weak to Ground, but its only other weakness is Water, which is usually easy to play around.
  10. Fighting/Flying: Offensively, it hits 47.5% of Pokemon for super effective damage, while only being resisted by 1.6%. Defensively, it's weak to Ice, but resists Fighting and is immune to Ground.
  11. Flying/Ghost: Offensively, it hits 37.4% of all Pokemon for super effective damage, while only being resisted by 0.7%. Defensively, it's weak to Ice and Rock, but is immune to Ground and Fighting. Its immunity to most hazards and Rapid Spin make it a great type for a support Pokemon.
  12. Dragon/Water: Offensively, it is only resisted by 1.2% of Pokemon. Defensively, it is only weak to Dragon and Fairy.
  13. Dark/Ghost: Offensively, it is decent. Defensively, it is only weak to Fairy, but is immune to Fighting.
  14. Ground/Ice: Offensively, it is probably the best in the game, with 53.2% of Pokemon being weak to it, with only 0.6% resisting it. Defensively, it is weak to a lot of types, but the only notable one is Fighting.
  15. Fairy/Steel: Offensively, it is decent. Defensively, it is weak to Ground, but is immune to two types, and resists nine types, including Ice and Rock.
  16. Fire/Steel: Offensively, it hits 35.3% of Pokemon for super effective damage. Defensively, it has some huge problems. It is weak to Fighting and quad weak to Ground. This would be a death sentence for most types, but this type makes up for it with four resistances, an immunity, and FIVE QUAD RESISTANCES! This makes it very easy to switch in, and while its shortcomings prevent it from being higher, its benefits are amazing.
  17. Ground/Water: Offensively, 32.5% of Pokemon are weak to it. Defensively, it is only weak to Grass, while resisting Rock.
  18. Fighting/Psychic: Offensively, 38.4% of Pokemon are weak to it. Defensively, it resists Fighting and Rock.

Lastly, consider using color to represent each type. For example, Fire type may make use of red, and Ice type may make use of a baby blue. This will help people like me immediately recognize the type instead of having to read it. When all is said and done, i would expect to see something like this:

Here is my process on how I rank these.
The main contributor to a type combos ranking is whether or not they are weak to Ground, Ice, and Fighting. These three types warp the meta around them, and being weak to even two of them can bring a Pokemon's ranking down a fair amount. Being quad weak to one while still having a weakness to another will deprive a type combo of a top spot, unless they have a really good reason for it. Fire/Steel, an otherwise excellent type, barely makes the top 15, because it suffers from a fighting weakness and a quad weakness to ground. Likewise, Ground/Rock is an excellent offensive type, but is rather low on the rankings because it is unfortunately weak to all three. To a lesser extent, Rock is also an important type to not be weak to, due to Stealth Rocks, however it is more of an afterthought.
The next most influential category is how well the type combo is defensively, but it is valued just barely more than offense. A pokemon's type does not usually prevent it from being a sweeper, but it often prevents a pokemon from being a wall. Here are to examples of this:

Deoxys attack is a pure psychic type, which is not that good offensively. Despite this, its decent movepool and great stats let it perform well as a sweeper.
Avalugg has great defensive stats, reliable recovery, and hazard support. However, it has a huge flaw. It is an ice type. Shocking, I know. Ice is a bad defensive type, and this prevents avalugg from making any meaningful impact on the meta.

160: Rock / Ground

I'm sorry, what? STAB EdgeQuake is bad is it? As of SV, those moves are resisted by a grand total of 7 fully evolved Pokemon (5 if you don't count abilities). Granted that typing is poor defensively with 2 4X weaknesses, but it's not horrendous as you still have nice resistances to Fire, Normal, Flying, Rock and an Electric immunity. The problem is the same we used to have with Ice types, Game Freak keeps putting it on slow bulky Pokemon. If they put in on a fast attacker like Weavile, guarantee that Pokemon would be an OU star (if it didn't have a crippling ability).

168: Fire / Flying

Again, WHAT?! 6 resistances and an immunity, coverage only resisted by Rock types. Maybe when Stealth Rock was omnipresent, but with Heavy Duty Boots you can negate that. The fact that you have this listed below Rock / Steel and Bug / Ice is hilarious.

65: Psychic / Dark

A combo that resists...absolutely nothing. OK, has a Psychic immunity, but still...

171: Bug / Grass

OK, can't argue with that, that typing truly is the pits.

Rock grounds main problem is its garbage defence. also, im still changing these, and that ranking might change in the future.

i have analyzed them, but it was a rushed job, case in point, when i first put this up, electric steel was in the top 20 for some reason.
 
168 Fire Flying
Fire flying has two incredible stabs for offense and while it has 3 common weaknesses, the X4 rock weakness does hurt, it also has 6 resistances, including fairy, fighting and fire, and an immunity to ground. Numerous pokemon with the fire/flying type have been good, such as moltres, and this should be at least in the top half not the 4th worst type combo.
 
I feel like you were looking a lot at the mathematics of how which types hit how many types and are hit by so many types whilst forgoing some important context. For example, you put pure grass very low on your list, it's the lowest mono type, probably because Grass is resisted by (I think) 7 types and is hit super effectively by 5 types. This is very important to note, however the fact that 3 of the types Grass is weak against are relatively rare (Poison, Bug and Flying) as coverage moves, the fact Grass resists Key offensive types like water and ground and hits those specific types super effectively is huge. Mono Grass should be at least in the upper half of this ranking

Similarly, Fire/Ground is absolutely not no 7. Like it's good offensively (albeit not so good to put it in the upper regions of this list due to its offensive prowess by itself) and definitely not this good defensively. Primal Don managed to utilize the typing immensely well due to its immunity to water, if this typing was so good defensively, defensive Camerupt with Solid Rock would be used a lot more
